Pineapple Turkey Muffins


  • 1 lbs of ground turkey (can use chicken also)
  • 1cup of vegetable puree of choice (zucchini, broccoli, squash)
  • 1 TBS organic extra virgin olive oil
  • 1/4 of fresh pineapple (chopped/blended)
  • 1/2 tsp aluminum free baking soda
  • 1/2 onion chopped
  • 1/4 tsp garlic
  • 1/4 tsp salt


  1. Combine wet and then dry and together
  2. Combine all ingredients in food processor until a meatball batter like consistency
  3. Cook at 350 for about 35-40 min.
  4. I freeze these as well for later use.
