Potato & Carrots “Cheese Sauce”


  • 1 cup potato, peeled and cubed
  • 1/2 cup carrot, chopped
  • 2 T olive oil
  • 1/4 cup water
  • 1 1/2 t. Lemon Juice
  • 1/4 t garlic
  • 1/4 t onion
  • 1/2 t sea salt
  • 1/4 t paprika


  1. Put the potato and carrots into pot of water
  2. Bring to a boil, and simmer for 20-25 minutes until soft
  3. Drain veggies and add them to a food processor or high powered blender
  4. Add remaining ingredients and process for 1-2 minutes
  5. You can add more salt to taste (I do)
