Thai Curry Chicken-Chickpea


  • 1/4 lb Chicken cooked
  • 1/4 can Garbanzo beans
  • 1/4 small container Coconut milk
  • squirt Lime juice
  • 2 tsp Red curry paste
  • handful Leeks/green onions
  • 1/4 tsp Garlic
  • handful Lettuce
  • Salt to taste
  • Red curry powder Sprinkle
  • 1-2 tsp Honey
  • Coconut oil


  1. Saute Onions and Garlic on Coconut Oil
  2. Add Chicken and toss
  3. Add beans
  4. Add coconut milk slowly and mix
  5. Add everything else and cook until sauce becomes reddish and beans are slightly hardened.
